High-Protein KFC Zinger Burger

Pat the two chicken breast fillets dry. Season all over with salt, black pepper, paprika, garlic powder, and onion powder.

Pour the Frank’s RedHot into a shallow dish. Dunk the seasoned chicken in the hot sauce, turning to coat both sides.

Transfer the sauced chicken to the crushed cornflakes. Press and turn the fillets until they are evenly covered with a cornflake coating.

Place the coated chicken in an air fryer and cook at 190°C / 375°F for 16–18 minutes, turning if needed, until the coating is crisp and the chicken reaches 74°C / 165°F internally. Alternatively, bake in an oven at 200°C / 400°F until cooked through and crisp.

While the chicken cooks, split the brioche bun and toast the cut sides until lightly golden.

Add the light mayonnaise and sriracha to a small bowl. Stir until evenly combined into a creamy, spicy sauce.

Spread the sauce over the toasted bun. Add shredded lettuce, one piece of crispy chicken, and a slice of light Swiss cheese.
