Invisible Apple Cake (Gâteau Invisible Aux Pommes)

Invisible Apple Cake (Gâteau Invisible Aux Pommes)

Imported by Michael Carroll on SeeMeCook

A beautiful French dessert made by layering a massive amount of thinly sliced apples in a light, custard-like batter. The apples become so tender during baking that they almost disappear into the cake.

Ingredients

  • 2 lb apples (thinly sliced, preferably with a mandolin)
  • flour (small amount)
  • fall spices (such as cinnamon or nutmeg)
  • 2 eggs
  • sugar
  • milk
  • butter (melted)
  • vanilla extract
  • powdered sugar (for serving)
  • whipped cream (for serving)
  • ice cream (for serving)
  • caramel sauce (for serving)

Steps

  1. 1

Thinly slice two pounds of apples using a knife or a mandolin for speed and consistency.

  2. 2

In a mixing bowl, combine the flour, fall spices, eggs, sugar, milk, melted butter, and vanilla to create a simple custard-like batter.

  3. 3

Add the apple slices to the batter and toss gently until every slice is thoroughly coated.

  4. 4

Layer the coated apple slices into a loaf pan, stacking them flat to create the layered effect.

  5. 5

Bake for over an hour (approximately 60-70 minutes) until the apples are tender and have almost merged with the batter.

  6. 6

Serve the cake warm or at room temperature, topped with powdered sugar, whipped cream, or ice cream and caramel sauce.

Notes

The key to this cake is slicing the apples as thinly as possible so they soften completely and 'disappear'. A mandolin is highly recommended for this task.
