Ingredients
- 35 g Light butter or butter (Softened)
- 30 g Unsweetened applesauce
- 30 ml Sugar-free syrup
- 1 Medium egg
- 5 ml Vanilla extract (Optional)
- 45 g All-purpose flour
- 25 g Casein protein powder
- 10 g Oat flour
- 4 g Baking soda
- Salt (A pinch)
- 96 g Granulated sugar substitute (You can also use half regular sugar and half substitute for the best texture)
- 15 g Chocolate chips (For mixing into the dough)
- 15 g Additional chocolate chips (Optional, for a gooier texture)
- Chocolate chunks (Optional, to taste, for topping)
- Grease for greasing the skillet (For lightly greasing a 20 cm (8-inch) skillet)
Steps
- 1
Preheat the oven to 175 °C (350 °F). Lightly grease a 20 cm (8-inch) skillet.
- 2
In a bowl, mix the softened butter, applesauce, sugar-free syrup, egg, and vanilla extract, if using, until well combined.
- 3
Add the all-purpose flour, casein protein, oat flour, baking soda, salt, and sugar substitute. Mix until a thick cookie dough forms.
- 4
Fold in the chocolate chips to distribute them throughout the dough.
- 5
Press the dough evenly into the prepared skillet.
- 6
If desired, sprinkle the additional chocolate chips and chocolate chunks on top.
- 7
Bake for 12-16 minutes, until the edges are golden and set but the center is still slightly soft.
- 8
Let cool for 5 to 10 minutes. During this time, the exterior will set while the center will retain a thick, gooey texture.
