Ingredients
- 0.5 cup unsalted butter (Melted and cooled slightly)
- 0.5 cup light brown sugar
- 0.25 cup granulated sugar (Plus 1 tbsp; source states 1/4 cup + 1 tbsp)
- 1 egg (Room temperature)
- 1 tbsp vanilla bean paste
- 1.25 cup all-purpose flour
- 1 tsp espresso powder (Optional)
- 0.5 tsp baking soda
- flaky salt (A pinch, plus sea salt for sprinkling after baking)
- 1.333333 cup semi-sweet chocolate chips (Plus more for topping, optional)
Steps
- 1
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- 2
In a bowl, combine the all-purpose flour, baking soda, espresso powder, and a pinch of flaky salt. Set the dry mixture aside.
- 3
Place the melted butter, which has been cooled slightly, in a separate bowl.
- 4
Add the light brown sugar and granulated sugar to the butter. Whisk for 1–2 minutes, until the mixture turns into a paste.
- 5
Crack the room-temperature egg into the butter-and-sugar mixture.
- 6
Add the vanilla bean paste and mix until combined.
- 7
Add the dry ingredients to the wet mixture. Gently fold with a spatula until just combined; do not overmix the batter.
- 8
Add the semi-sweet chocolate chips and fold them in with the spatula until evenly distributed.
- 9
Scoop the dough into 9 cookies onto the parchment-lined baking sheet.
- 10
Freeze the scooped cookies for 30 minutes.
- 11
Arrange no more than 4 frozen cookies on a 15 × 10-inch baking tray, leaving room for them to spread while baking.
- 12
Bake at 350°F for 11–12 minutes, until the edges are golden and crisp while the centers remain gooey.
- 13
Sprinkle the baked cookies with sea salt. Allow them to cool completely before serving.
Notes
The recipe yields 9 cookies, but the cookies should be baked in batches with no more than 4 on a 15 × 10-inch tray. The source does not specify the scoop size or whether the optional extra chocolate chips are added before or after freezing; use them as a topping if desired.
