Ingredients

  • 1 tbsp olive oil (Plus a little oil for tossing the drained pasta)
  • 2 tbsp butter
  • 1 yellow onion (Medium; finely diced)
  • 0.333 cup sun-dried tomatoes (Chopped)
  • 7 garlic (Cloves; minced)
  • 3 tbsp sun-dried tomato oil (Oil from the jar)
  • 0.667 cup chicken broth
  • 2 tbsp tomato paste
  • 0.667 cup heavy cream (Room temperature)
  • 1 tsp Italian seasoning
  • 1 tsp chili flakes
  • 1 tsp black pepper
  • 1 tsp salt (For the sauce; also salt the pasta water to taste)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 0.5 lemon juice (Juice of 1/2 lemon)
  • 2 tsp lemon zest
  • 0.5 cup Parmesan cheese (Grated; plus more for topping)
  • 0.5 cup pasta water (As needed)
  • fresh parsley (A handful, plus more for topping; chopped)
  • 8 oz pasta (Pasta of choice)
  • 1 box Gorton's Double Crunch Shrimp (Cook according to package directions; brand-specific box weight not stated)
  • sea salt (For seasoning the hot cooked shrimp)

Steps

  1. 1

Bring a large pot of salted water to a boil. Add the pasta and cook until just shy of al dente. Before draining, reserve 1/2 cup pasta water, then drain the pasta and toss it with a little oil so the noodles do not clump.

  2. 2

Cook the Gorton's Double Crunch Shrimp according to the package directions; the source uses the oven. When the shrimp are hot, season them with a little sea salt.

  3. 3

Heat the olive oil and butter in a large pan over medium heat. Once the butter has melted, add the diced onion and cook for about 5 minutes, until translucent.

  4. 4

Add the minced garlic and cook for 1–2 minutes. Add the Italian seasoning, chili flakes, black pepper, salt, onion powder, and garlic powder, and toast for 1 minute to wake up the seasonings.

  5. 5

Add the chopped sun-dried tomatoes, sun-dried tomato oil, and tomato paste. Cook for 2–3 minutes, stirring to combine.

  6. 6

Pour in the chicken broth and bring it to a gentle simmer. Lower the heat, then slowly stream in the room-temperature heavy cream, stirring occasionally for a few minutes.

  7. 7

Add the lemon juice, lemon zest, grated Parmesan, and a handful of fresh parsley. Mix everything together until combined.

  8. 8

Add the cooked pasta to the sauce and toss until every strand is coated. Add the reserved pasta water as needed to loosen the sauce.

  9. 9

Top the pasta with the crispy shrimp, more Parmesan, and more fresh parsley. Serve immediately.

Notes

The shrimp package weight, package cooking temperature, and package cooking time were not provided; follow the instructions on the box. The amount of pasta oil and finishing salt is also unspecified.
