Ingredients

  • baking spray (For greasing the loaf pan.)
  • 0.75 cup unbleached all-purpose flour
  • 0.5 cup white whole-wheat flour
  • 0.75 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 1.5 tsp pumpkin spice
  • 3 very ripe medium bananas (Mashed.)
  • 0.5 cup pureed pumpkin
  • 2 tbsp butter (Softened.)
  • 0.5 cup light brown sugar (Unpacked.)
  • 1 large egg white
  • 1 large egg
  • 1 tsp vanilla extract
  • 0.25 cup pecans (Chopped; optional. May be omitted or replaced with walnuts or chocolate chips.)

Steps

  1. 1

Preheat the oven to 325°F (165°C). Grease a 9-by-5-inch loaf pan with baking spray.

  2. 2

In a medium bowl, combine the all-purpose flour, white whole-wheat flour, baking soda, cinnamon, pumpkin spice, and salt. Whisk with a wire whisk, then set the dry mixture aside.

  3. 3

In a large bowl, cream the softened butter and brown sugar with an electric mixer.

  4. 4

Add the egg white and whole egg to the butter mixture. Add the mashed bananas, pumpkin purée, and vanilla extract.

  5. 5

Beat the wet mixture at medium speed until thick, scraping down the sides of the bowl as needed.

  6. 6

Add the flour mixture and the chopped pecans, if using. Blend at low speed just until combined; do not overmix.

  7. 7

Pour the batter into the prepared loaf pan. Bake on the center rack for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.

  8. 8

Let the loaf cool in the pan for at least 20 minutes. Allow it to reach room temperature before slicing so it does not fall apart.

Notes

Store the bread in the refrigerator for up to 5 days, or freeze it for up to 3 months. Wrap slices in foil or plastic wrap and place them in a freezer-safe container or bag. To thaw, transfer to the refrigerator or microwave directly from frozen. If substituting all-purpose flour for the white whole-wheat flour, use an equal amount. Avoid overmixing the batter, which can make the bread tough.
