Ingredients
- 1 cup low-fat cottage cheese
- 9 tbsp high-protein milk (Use 1/2 cup in the blended base, plus 1 tablespoon for respinning if the mixture looks powdery or crumbly.)
- 1 scoop vanilla protein powder
- 1 tbsp vanilla instant pudding mix
- 1 tbsp maple syrup
- 0.5 tsp vanilla extract
- salt (Pinch)
- 4 gluten-free Oreo-style cookies (Divided; crush three cookies into chunky pieces and reserve the remaining crushed cookie for finishing.)
Steps
- 1
Add the cottage cheese, 1/2 cup of high-protein milk, vanilla protein powder, vanilla instant pudding mix, maple syrup, vanilla extract, and a pinch of salt to a blender. Blend until completely silky, with no visible cottage-cheese texture.
- 2
Pour the blended mixture into a Ninja Creami pint. Freeze it flat for 12 to 24 hours.
- 3
Spin the frozen mixture using the Lite Ice Cream setting.
- 4
If the mixture looks powdery or crumbly, add 1 tablespoon of high-protein milk and respin it. The finished mixture should be thick, smooth, and spoonable.
- 5
Crush three of the cookies into chunky pieces. Make a well in the center of the spun ice cream, add the crushed cookies, and run the Mix-In cycle.
- 6
Finish with the remaining crushed cookie so each serving has a classic McFlurry-style texture.
