Ingredients
- 3 cup all-purpose flour
- 1.5 tsp fine sea salt
- 1 tsp baking powder
- 1 cup hot water
- 0.333 cup butter (Room temperature and cut into small pieces; may be replaced with lard, olive oil, or coconut oil.)
Steps
- 1
Add the flour to a mixing bowl.
- 2
Add the salt and baking powder to the bowl, then stir to combine the dry ingredients.
- 3
Stir in the room-temperature butter pieces.
- 4
Slowly mix in the hot water a little at a time until a dough forms.
- 5
Transfer the dough to a lightly floured countertop and knead for 1–2 minutes, just until smooth.
- 6
Cover the dough with a kitchen towel and let it rest for 10 minutes.
- 7
Divide the dough into 12 equal pieces for medium 8-inch tortillas, or 10 equal pieces for larger 10-inch tortillas.
- 8
Roll each piece into a ball. The dough may remain at room temperature for up to 2 hours at this point.
- 9
Lightly flour the countertop and the dough. Using a rolling pin or tortilla press, roll each ball into a paper-thin circle.
- 10
Heat a skillet over medium-high heat. Keep the skillet dry; no oil is added.
- 11
Place one tortilla in the hot skillet and cook for 30–60 seconds, until bubbles form.
- 12
Flip the tortilla and cook for about 30 seconds more.
- 13
Transfer the cooked tortilla to a plate or tortilla warmer and cover it with a dry kitchen towel while cooking the remaining tortillas.
Notes
For storage, keep cooked tortillas in an airtight bag in the refrigerator for up to 5 days. To freeze, place parchment paper between tortillas in a freezer-safe airtight container and freeze for up to 3 months. Thaw completely in the refrigerator, then rewarm in a hot skillet or microwave. The source recommends using the metric measurements for the most consistent results. A tortilla press may not make the dough thin enough; finish rolling with a rolling pin if needed.
