Ingredients
- 5 russet potatoes (Cut into approximately 1/4-inch-thick strips)
- salt (To taste; used for boiling and coating the potatoes)
- 2 tbsp cornstarch (For coating the boiled fries)
- 1 tbsp garlic powder (For seasoning the fries)
- 0.333 cup freshly grated Parmesan cheese (For seasoning the fries; adjust to taste)
- oil (For frying)
- 0.5 cup mayonnaise (For the garlic aioli)
- 3 cloves garlic (Finely minced)
- 1 tsp garlic powder (For the garlic aioli)
- 1 tsp black pepper (For the garlic aioli)
- salt (To taste; for the garlic aioli)
- 1 tsp lemon juice (For the garlic aioli)
- 1 tbsp fresh parsley (Freshly chopped; used to season the fries and in the garlic aioli)
Steps
- 1
Wash the russet potatoes and cut them into approximately 1/4-inch-thick strips. Rinse the cut potatoes until the water runs clear.
- 2
Bring a pan of water to a boil and add salt. Add the potato strips and boil for 2–3 minutes, or until they are about one-third cooked.
- 3
Remove the potatoes from the water and drain them. Pat the fries thoroughly dry on a kitchen towel until completely dry.
- 4
Place the boiled, dried fries in a bowl. Add the cornstarch and salt, then toss until the fries are evenly coated.
- 5
For an extra-crispy coating, optionally chill the coated potatoes in the refrigerator for 30 minutes before frying.
- 6
Heat oil in a pan. Once the oil is hot, add the coated potatoes in batches without overcrowding the pan.
- 7
Fry the potatoes for about 4–6 minutes, or until they are crispy and golden.
- 8
Season the hot fries with garlic powder, freshly grated Parmesan cheese, and chopped parsley. Adjust the garlic powder and Parmesan to taste.
- 9
Make the garlic aioli by combining the mayonnaise, minced garlic, garlic powder, black pepper, salt, lemon juice, and chopped parsley in a bowl. Mix until smooth.
- 10
Serve the crispy garlic Parmesan fries hot with the garlic aioli for dipping.
Notes
The source does not specify the amount of frying oil or an oil temperature. Do not overcrowd the pan. Chilling the coated potatoes for 30 minutes is optional and intended to make the coating extra crispy.
