Golden Cabbage with Peanut, Soy, and Lime Sauce

Ingredients
- 1 Green cabbage (Cut into quarters or sixths, depending on size)
- 2 tbsp Butter (For browning the cabbage)

Cut the cabbage into quarters or sixths, depending on its size. Try to keep part of the central stem attached to each piece so the wedges hold their shape during cooking.

Heat the butter in a large skillet or heavy-bottomed pot over medium-high heat. Once melted and lightly foaming, place the cabbage wedges cut-side down.

Brown the cabbage for several minutes, turning as needed, until the cut surfaces are deeply golden. Work in batches if the skillet is too crowded, to prevent the cabbage from steaming instead of browning.

Add the water until it reaches approximately halfway up the cabbage wedges. Cover the skillet or pot and cook over medium heat until the cabbage is tender when pierced with a knife and the water has almost completely evaporated, approximately 20 minutes.

While the cabbage cooks, prepare the sauce. Mix the peanut butter, soy sauce, and minced or grated garlic until you have a thick, smooth sauce. If it is too thick to spread, add a small amount of water.

When all the cooking liquid has evaporated, remove the lid and pour or spread the sauce over the cabbage wedges, taking care to coat the browned surfaces.

Cook the cabbage with the sauce for another 1 to 2 minutes, until the sauce is hot and slightly glossy. Avoid leaving it over high heat for too long so the soy sauce does not burn.

Serve the cabbage hot and finish with scallions, parsley, peanuts, lime zest, and a little lime juice.
