Ingredients
- 0.5 bunch green onion (scallion) (Small bunch; washed, dried, trimmed, and sliced crosswise. Reserve half for serving.)
- 6 eggs
- 3 hot dogs (Pat dry and slice crosswise into thin pieces.)
- 4 rice paper wrappers
- 2 tsp toasted sesame oil (For coating the skillet.)
- 3 tbsp mayonnaise (For the spicy mayo.)
- 1 tbsp sriracha chili sauce (For the spicy mayo.)
- 1 tsp rice vinegar (For the spicy mayo.)
- 1 tsp honey (For the spicy mayo.)
- 0.5 tsp fish sauce (For the spicy mayo.)
- 0.25 tsp salt
- 0.25 tsp black pepper (Used in the spicy mayo and egg mixture.)
Steps
- 1
Place the mayonnaise, sriracha, rice vinegar, honey, fish sauce, and black pepper in a small bowl. Stir until combined, then set the spicy mayonnaise aside.
- 2
Wash and dry the green onions, trim them, and slice them crosswise into thin pieces. Place half of the sliced green onions in a medium bowl and reserve the remaining half for serving.
- 3
Add the eggs, salt, and black pepper to the bowl with half of the green onions. Beat with a whisk or fork until the mixture is smooth.
- 4
Pat the hot dogs dry with paper towels, then slice them crosswise into thin pieces. Add them to the egg mixture and stir to combine.
- 5
Preheat a 10-inch nonstick skillet over medium heat.
- 6
Once the skillet is hot, add the toasted sesame oil and swirl the pan to coat the bottom.
- 7
Working one at a time, lay a rice-paper wrapper in the skillet. Add 1/3 cup of the egg mixture to the center of the wrapper and carefully spread it to the edges with the back of a spoon. It is fine if some of the egg spills over the edges.
- 8
Cook the rice-paper pizza, gently rotating it a few times with tongs, until the edges are crispy and the egg is cooked through, about 4–5 minutes. Transfer it to a platter and repeat with the remaining wrappers and egg mixture.
- 9
Divide the pizzas between plates. Drizzle them with the spicy mayonnaise, sprinkle with the reserved green onions, and serve.
