Ingredients

  • 1 tbsp Neutral oil (For the Ginger Sesame Soy marinade)
  • 0.5 tsp Sesame oil (For the Ginger Sesame Soy marinade)
  • 1 tbsp Fresh ginger (Grated; for the Ginger Sesame Soy marinade)
  • 2 Garlic (Cloves; named in the Ginger Sesame Soy, Hot Honey Gochujang, and Smoky Chipotle variations; quantities are not specified for the latter two)

  • 1 tbsp Rice vinegar (For the Ginger Sesame Soy marinade; also named in the Hot Honey Gochujang variation, amount not specified there)
  • 1 tbsp Honey (For the Ginger Sesame Soy marinade; also named in the Hot Honey Gochujang variation, amount not specified there)

  • 1.5 tbsp Gochujang (Korean chili paste; Hot Honey Gochujang variation)
  • 1 tsp Fresh ginger (Hot Honey Gochujang variation; OCR appears to show “- tsp ginger” with the quantity partly obscured, while audio confirms ginger but gives no amount; interpreted as 1 tsp with low confidence)
  • Soy sauce (Named in the Hot Honey Gochujang variation; amount not visible or spoken)
  • Rice vinegar (Named in the Hot Honey Gochujang variation; amount not visible or spoken)
  • Honey (Named in the Hot Honey Gochujang variation; amount not visible or spoken)
  • Pureed fresh green kiwi (Named in the Hot Honey Gochujang variation; amount not visible or spoken)
  • 1 Chipotle pepper (Smoky Chipotle variation; OCR specifies one chipotle)
  • 0.75 tsp Ground cumin (Smoky Chipotle variation; the OCR ingredient list shows ¾ tsp, while another frame appears to show ½ tsp)
  • 0.5 tsp Dried oregano (Smoky Chipotle variation)
  • 1 tbsp Orange juice (Smoky Chipotle variation)
  • 0.5 tbsp Lime juice (OCR lists ½ Tbsp lime for the Smoky Chipotle variation)
  • 1 tbsp Sugar (Smoky Chipotle variation)
  • 1 tbsp Neutral oil (Smoky Chipotle variation; visible in a later frame, not in its ingredient-list frame)
  • 0.5 tsp Ground cumin (Smoky Chipotle variation; a later frame appears to show ½ tsp, conflicting with the ¾ tsp ingredient-list frame)
  • 0.5 tsp Dried oregano (Smoky Chipotle variation; a later frame repeats ½ tsp oregano)
  • Garlic (Named for the Hot Honey Gochujang and Smoky Chipotle variations; amounts not specified. The 2-clove quantity above is for the Ginger Sesame Soy variation)

Steps

  1. 1

For the Ginger Sesame Soy marinade, combine the neutral oil and sesame oil in a bowl.

  2. 2

Add the grated ginger and garlic.

  3. 3

Add the soy sauce, rice vinegar, honey, and pureed fresh green kiwi; mix to combine.

  4. 4

For the Hot Honey Gochujang marinade, combine the gochujang, ginger, garlic, soy sauce, rice vinegar, honey, and kiwi. Quantities are not supplied for most of these ingredients.

  5. 5

For the Smoky Chipotle marinade, combine the chipotle, garlic, cumin, oregano, orange juice, lime juice, sugar, and oil. The source does not give a complete, consistent quantity list for this variation.

  6. 6

Rest the marinade in the refrigerator for 30 minutes to 4 hours, as stated in the on-screen general marinade formula.

Notes

The on-screen general formula lists 1 Tbsp each of fat, aromatics, umami (soy, fish sauce, or miso), acid, sweet, and pureed fresh green kiwi, with refrigeration for 30 minutes to 4 hours. The three variations provide incomplete and partially conflicting measurements; in particular, the Hot Honey Gochujang quantities are mostly absent, and the Smoky Chipotle cumin is shown as both ¾ tsp and ½ tsp. No marinating meat or final cooking method is specified.
