Ingredients

  • 2 cup Greek yogurt
  • 2 Mini cucumbers (Grated)
  • 3 tbsp Fresh mint (Chopped; reserve some fresh leaves for finishing)
  • 1 large clove Garlic (Grated)
  • 1 lb Ground beef (80/20)
  • 1 Small yellow onion (Grated)
  • 0.5 tsp Ground turmeric
  • 2 tsp Salt (Use 1 teaspoon in the beef mixture and the remaining 1 teaspoon to season the chilled yogurt)
  • Black pepper (Plenty, to taste)
  • 0.25 cup Walnut halves
  • 2 tbsp Cranberries (The written method refers to these as raisins; the ingredient list specifies cranberries)
  • Pomegranate molasses (Optional, for serving)
  • Warmed pita or white rice (For serving)

Steps

  1. 1

In a medium bowl, combine the Greek yogurt, grated cucumbers, chopped mint, and grated garlic. Mix thoroughly, then cover and chill until ready to serve.

  2. 2

In a separate bowl, combine the ground beef, grated onion, ground turmeric, 1 teaspoon of the salt, and plenty of black pepper. Mix thoroughly until evenly combined.

  3. 3

Heat a large, well-seasoned cast-iron skillet over medium-high heat until very hot.

  4. 4

Add the beef mixture to the hot skillet in large, irregular chunks, working piece by piece. Leave the pieces undisturbed for 6 to 8 minutes, until the undersides are deeply charred and crisp and the meat releases naturally from the pan.

  5. 5

Use a wooden spoon to break up any extra-large pieces and toss the beef so it cooks evenly.

  6. 6

Add the walnut halves and cranberries to the skillet. Stir and cook for another 2 to 3 minutes, until the beef is cooked through and the walnuts are toasted.

  7. 7

Season the chilled yogurt mixture with the remaining 1 teaspoon of salt and mix it in.

  8. 8

Spread the seasoned cucumber yogurt across the bottom of a serving platter.

  9. 9

Layer the crispy beef mixture over the yogurt. Finish with optional pomegranate molasses and fresh mint leaves, and serve with warmed pita or white rice.

Notes

The ingredient list specifies cranberries, while the written method says raisins; this extraction follows the listed ingredient, cranberries. The source does not specify a chilling duration or an exact internal temperature for the beef; cook until done as stated.
