Ingredients
- 1 cup rolled oats
- 1 cup frozen blueberries (Wild blueberries may provide a deeper color because they break down easily when defrosted.)
- 2 tbsp chia seeds
- 0.5 tsp lemon zest
- 0.5 tsp ground cardamom
- honey (A drizzle, to taste.)
- 3 cups low-fat milk or soy milk (Use low-fat milk or soy milk.)
- high-protein vanilla Greek yogurt or quark (For serving; amount to taste.)
- fresh berries (Berries of choice, for serving.)
Steps
- 1
Add the oats, frozen blueberries, chia seeds, lemon zest, ground cardamom, honey, and low-fat milk or soy milk to a pot or pan. Stir to combine.
- 2
Bring the mixture to a boil, then let it simmer for 5–10 minutes, stirring frequently, until the oatmeal thickens.
- 3
Remove the pot from the heat and let the oatmeal sit for 5 minutes so the chia seeds can absorb some of the liquid.
- 4
Divide the oatmeal between two bowls. Top each serving with high-protein vanilla Greek yogurt or quark and fresh berries, then serve.
Notes
The final color depends on the blueberries used. The creator notes that frozen wild blueberries break down easily as they defrost and therefore give the oatmeal a particularly vivid color. The stated nutrition with toppings is approximately 25 g protein and 12 g fiber per serving.
