Ingredients
- 3 lb carrots (Scrubbed, peeled, and cut into sticks (like fries or long pieces).)
- 2 tbsp extra virgin olive oil
- Kosher salt (To taste.)
- black pepper (Freshly cracked; to taste.)
- 3 tbsp butter (Melted.)
- 1.5 tbsp coconut sugar
- 0.25 cup maple syrup
- 1 tbsp Dijon mustard
- 2 tsp apple cider vinegar
- 2 garlic (Cloves, grated.)
- flaky sea salt (For finishing; to taste.)
- parsley (Chopped, optional, for garnish.)
Steps
- 1
Preheat the oven to 425°F (218°C). Line two sheet pans with parchment paper.
- 2
Scrub, peel, and cut the carrots into sticks of roughly even size so they roast evenly.
- 3
Spread the carrots across the prepared sheet pans. Drizzle with olive oil, season with kosher salt and freshly cracked black pepper, and rub to coat evenly.
- 4
Roast the carrots without stirring for 30–35 minutes, until tender and browned in spots.
- 5
While the carrots roast, melt the butter. Stir in the coconut sugar, then add the maple syrup, Dijon mustard, apple cider vinegar, and grated garlic. Whisk until combined.
- 6
Remove the carrots from the oven. Pour the glaze over them and toss with a silicone spatula to coat.
- 7
Return the glazed carrots to the oven and roast for another 10 minutes, until caramelized.
- 8
Finish with flaky sea salt and chopped parsley, if desired. Serve immediately.
