  • 100 g Boiled chicken breast (Shredded; for each cube.)
  • 4.5 Shiitake mushrooms (Sliced; source gives a range of 3–6 per cube.)
  • 0.333 cup Sweet corn (For each cube.)

  • 2 tbsp Low-sodium soy sauce (For each cube.)
  • 2 tbsp Rice vinegar (For each cube.)
  • 3 tbsp White miso (For each cube.)
  • 2 tsp Chicken or vegetable bouillon (Better Than Bouillon; for each cube. Optional: add 2 additional tsp per cube only if you can remove the ramen seasoning packet.)
  • 2 tsp Additional chicken or vegetable bouillon (Optional, per cube; only add if the ramen seasoning can be removed from the noodles.)
  • 0.5 tbsp Chili crisp (For cooking one cube.)
  • 0.5 cup Shallots (Diced; for cooking one cube.)
  • 4 cloves Garlic (Minced; for cooking one cube.)
  • 1 tbsp Ginger (Minced; for cooking one cube.)
  • 6 cup Water (For cooking one cube. If using prepared, fully diluted bone broth instead of concentrate, use 4 cups water plus 2 cups prepared bone broth.)
  • 1 Frozen ramen cube (One prepared cube; the source makes 2 cubes total.)
  • 2 packets High-protein ramen (For cooking one cube; remove seasoning if possible. Cook according to package directions.)
  • 2 Soft-boiled eggs (For serving one cube; one egg per bowl.)
  • 3 sheets Nori (Cut into quarters; for serving one cube.)
  • 2 Green onions (Green parts, sliced; for serving one cube.)

Steps

  1. 1

For each of 2 freezer cubes, place one pouch of chicken bone broth concentrate, 100 g shredded boiled chicken, 3–6 sliced shiitake mushrooms, ⅓ cup sweet corn, the sliced whites of 2 green onions, 2 tbsp soy sauce, 2 tbsp rice vinegar, 3 tbsp white miso, and 2 tsp bouillon in a 2-cup freezer tray. Add the optional extra 2 tsp bouillon only if you can remove the ramen seasoning packet.

  2. 2

Freeze the filled trays until solid.

  3. 3

For one cube, heat the chili crisp in a pan and sauté the diced shallots until softened.

  4. 4

Add the minced garlic and ginger to the shallots. Cook until fragrant.

  5. 5

Add one frozen ramen cube and 6 cups water. If using fully diluted prepared bone broth in place of concentrate, use 4 cups water plus 2 cups prepared broth instead.

  6. 6

Cover and heat until the cube has melted.

  7. 7

Stir to combine the broth, then bring it to a boil.

  8. 8

Add the 2 packets of high-protein ramen noodles, removing the seasoning if possible. Cook according to the package directions.

  9. 9

Divide the ramen between two bowls. Top each bowl with a soft-boiled egg, nori cut into quarters, and sliced green onion tops.
