Ingredients
- 200 g cornflour (starch)
- 1050 g water
- 80 g glucose syrup
- 220 g sugar
- peanut powder (or black sesame powder, to taste)
Steps
- 1
Prepare the sugar base using the Thermomix sugar stages mode as directed by the machine interface, combining the water, glucose syrup, and sugar.
- 2
Once the sugar reaches the appropriate stage, allow it to cool until it forms a firm but pliable ring.
- 3
Coat the sugar ring thoroughly in cornflour to prevent sticking.
- 4
Begin the pulling process by stretching the ring and folding it into a figure-eight, then overlapping the loops to double the strands.
- 5
Repeat the stretching and folding process multiple times, keeping the strands well-dusted with cornflour, until thousands of fine, hair-like strands are formed.
- 6
Cut the bundle of silk-like strands into smaller sections.
- 7
Place a small amount of peanut powder (or black sesame powder) in the center of each section and roll the strands around the filling to form the final candies.
Notes
This is an advanced recipe requiring precision in sugar temperatures. The peanut powder can be substituted with black sesame powder according to preference.
