Ingredients
- 6 slices brioche or sourdough bread
- 3 tbsp unsalted butter (Softened; use generously for a crispy crust.)
- 3 slices cheddar cheese
- 0.5 cup shredded mozzarella cheese (Freshly grated.)
- 3 slices provolone cheese
- 0.5 cup shredded Colby Jack cheese (Freshly grated.)
Steps
- 1
Preheat a griddle or skillet over medium-low heat. A cast-iron skillet or stainless steel pan is recommended for even heat distribution.
- 2
Spread the softened unsalted butter over one side of each of the six bread slices.
- 3
Place three bread slices in the skillet with their unbuttered sides facing up.
- 4
Layer the cheeses on the unbuttered sides of the bread, adding cheddar, shredded mozzarella, provolone, and shredded Colby Jack.
- 5
Top each sandwich with one remaining bread slice, positioning the buttered side facing up.
- 6
Cook the sandwiches over medium-low heat for 3–4 minutes, or until the undersides are golden brown. Cook low and slow to develop a crisp crust without browning the bread too quickly.
- 7
Cover the skillet with a lid and cook for 2 minutes to help the cheese melt.
- 8
Flip each sandwich carefully and cook for an additional 3–4 minutes, until the second side is golden brown and the cheese is melted.
- 9
Transfer the sandwiches to a wire rack and let them rest for 2 minutes before serving.
Notes
Use a mixture of cheeses for a rich flavor profile, and freshly grate the shredded cheeses for optimal melting. The source does not specify whether all three sandwiches are cooked simultaneously or in batches; adjust the cooking time accordingly.
