Ingredients

  • 12 eggs (one per muffin cup)
  • 12 breakfast sausage (pre-cooked links, sliced into rounds)
  • 0.5 cup cheddar cheese (shredded)
  • cooking spray (to grease the muffin tin)

Steps

  1. 1

Preheat your oven to 350°F (175°C) and generously grease a 12-cup muffin tin with cooking spray.

  2. 2

Place sliced pieces of pre-cooked breakfast sausage into the bottom of each muffin cup.

  3. 3

Crack one whole egg into each individual muffin cup directly over the sausage.

  4. 4

Use a fork to whisk the egg inside each cup until the yolk is broken and combined with the white.

  5. 5

Top each egg mixture with a sprinkle of shredded cheddar cheese.

  6. 6

Place the muffin tin in the oven and bake for 15 to 20 minutes, or until the eggs are set and no longer runny.

  7. 7

Remove from the oven, let cool slightly, and use a knife or spatula to pop the omelette bites out of the tin.

Notes

For best results, use pre-cooked sausage as raw sausage may not cook through in the time it takes for the eggs to set. While the video shows mixing the eggs directly in the pan, you may find it easier to whisk them in a bowl first to avoid scratching the muffin tin's coating.
