Ingredients
- 50 g almond powder
- 50 g cashew nuts (steamed shelled cashews recommended; can substitute with sunflower seeds)
- 80 g sesame seeds
- 3 tbsp nutritional yeast
- 2 tsp salt
- 1 tsp garlic powder
Steps
- 1
Optional: Toast the cashew nuts (or sunflower seeds) and sesame seeds to add extra flavor. You can do this in the oven for 15 minutes or in a dry pan over medium heat for 5-6 minutes. This step is not mandatory but recommended for depth of flavor.
- 2
Place the almond powder, cashew nuts, sesame seeds, nutritional yeast, salt, and garlic powder into a blender.
- 3
Blend all the ingredients together until clumps of powder start to appear; this indicates that the oils are being released and the mixture is sufficiently blended.
- 4
Transfer the finished nut parmesan to an airtight container.
- 5
Store at room temperature for up to one month and sprinkle on pasta dishes, gratins, or risottos as desired.
Notes
The author recommends choosing steamed shelled cashews for ethical reasons. You can customize the flavor by adding other spices, onion powder, or dried herbs. This recipe yields approximately one 200g jar.
