Ingredients

  • 1 cup dried apricots (chopped)
  • 2 tbsp boiling water
  • 0.5 cup oat bran
  • 0.5 cup desiccated coconut (unsweetened)
  • 0.25 cup skim milk powder
  • 0.5 cup desiccated coconut (extra, for coating)

Steps

    Place the chopped dried apricots in a blender, food processor, or Thermomix. Blitz for 20 seconds, until the apricots have broken down into small, sticky pieces.

    Add the boiling water, oat bran, 1/2 cup of desiccated coconut, and skim milk powder to the blender or processor. Blend for another 20 seconds, or until all the ingredients are thoroughly combined into a cohesive mixture.

    Place the extra desiccated coconut in a shallow bowl. Take heaped teaspoons of the mixture and roll each portion between your hands to form a ball.

    Roll each apricot ball in the extra coconut until evenly coated. Store the finished balls in an airtight container in the refrigerator.

These are suitable for lunchboxes, after-school snacks, or a quick treat. Keep refrigerated in an airtight container.
