  • salt (To taste, for the sauce)
  • 1 tsp black pepper (For the sauce)
  • 1 tbsp garlic powder (For the sauce)
  • 0.5 cup cabbage (Diced)
  • 0.5 cup carrots (Diced)
  • 0.5 cup bell peppers (The source does not specify a preparation)
  • 1 yellow onion (Small and diced)
  • 0.5 cup mushrooms (Sliced)
  • 0.5 cup green onion (Diced; additional green onion may be used for garnish)
  • 1 tbsp fresh garlic (Minced)
  • 2 tbsp oil (For cooking the vegetables)
  • 12 oz chow mein noodles (Boiled according to packet instructions)
  • 1 tsp sesame oil (For finishing)
  • salt (To taste, for assembly and finishing)
  • black pepper (To taste, for assembly and finishing)

Steps

  1. 1

In a bowl, combine the chicken strips with salt, the chicken-marinade garlic powder, black pepper, baking soda, and soy sauce. Mix well so the seasoning evenly coats the chicken.

  2. 2

Refrigerate the seasoned chicken for at least 30 minutes.

  3. 3

Boil the chow mein noodles according to the packet instructions. Drain them and set aside for assembly.

  4. 4

Combine the light soy sauce, dark soy sauce, chili garlic sauce, oyster sauce, hoisin sauce, ketchup, rice vinegar, sesame seed oil, chicken stock, salt, black pepper, and garlic powder to make the sauce.

  5. 5

Heat a wok over high heat and add oil for cooking. Cook the marinated chicken in batches for 4–6 minutes, tossing it between turns, until cooked through.

  6. 6

Remove each cooked batch of chicken from the wok and set it aside.

  7. 7

Add oil to the same wok, then add the minced fresh garlic. Sauté for about 30 seconds, or until fragrant.

  8. 8

Add the diced green onion, yellow onion, and carrots. Sauté for 1 minute.

  9. 9

Add the bell peppers, mushrooms, and cabbage. Sauté for an additional 1–2 minutes.

  10. 10

Return the cooked chicken to the wok and add the boiled chow mein noodles to the vegetables.

  11. 11

Pour in the prepared sauce and mix everything together until the noodles, chicken, and vegetables are evenly coated.

  12. 12

Taste the chow mein and add more salt and pepper if needed.

  13. 13

Drizzle the sesame oil over the finished noodles. Garnish with additional green onion if desired and serve warm.

Notes

The source specifies boiling the noodles according to the packet instructions but does not provide a noodle-boiling time. It also calls for additional cooking oil as needed without specifying an amount. Chicken should be cooked through before combining with the noodles and vegetables.
