  • 1 yellow onion (large, diced)
  • 2 carrots (medium, diced)
  • 3 stalks celery (diced)
  • 5 cloves garlic (minced)
  • 1 bunch kale (rinsed, torn, and stems removed)
  • 2 peppers chipotle peppers in adobo (chopped; adjust amount to heat preference)
  • 1 tbsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp chili powder
  • 0.5 tsp dried thyme
  • 0.5 tsp garlic powder
  • 0.5 tsp black pepper
  • 30 oz kidney beans (drained and rinsed)
  • 2 cups low-sodium vegetable broth (use 2 to 2 1/2 cups)
  • 1.5 tbsp low-sodium soy sauce (stir in after removing from heat)
  • salt (to taste)
  • black pepper (additional, to taste)
  • 4 cups cooked brown rice (for serving)
  • green onions (sliced, for serving)

Steps

  1. 1

Heat the olive oil in a large Dutch oven or saucepan over medium heat.

  2. 2

Add the diced onion, carrots, and celery. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables are softened and fragrant.

  3. 3

Add the minced garlic and cook for about 30 seconds, just until fragrant.

  4. 4

Add the chopped kale, chipotle peppers, smoked paprika, dried oregano, chili powder, thyme, garlic powder, and black pepper. Stir well so the vegetables are coated in the spices.

  5. 5

Cook the kale and spice mixture for 30 to 60 seconds.

  6. 6

Add the drained, rinsed kidney beans and 2 to 2 1/2 cups vegetable broth.

  7. 7

Bring the mixture to a gentle simmer, then reduce the heat to medium-low.

  8. 8

Simmer uncovered for 20 to 25 minutes, stirring occasionally.

  9. 9

Remove the pot from the heat and stir in the low-sodium soy sauce.

  10. 10

Taste and season with salt and additional black pepper as desired.

  11. 11

Serve the red beans and kale over cooked brown rice, topped with sliced green onions.
