Ingredients

  • 4 tbsp butter (For sautéing the vegetables and rice)
  • 1 yellow onion (Small; diced into bite-sized pieces)
  • 2 ribs celery (Diced)
  • 1 cup carrots (Grated)
  • 1 tbsp garlic (Minced)
  • 2 cups jasmine rice (Uncooked; do not rinse, to retain the extra starch)
  • 1 tsp rosemary (Crushed)
  • 0.5 tsp thyme (Dried)
  • 1 tbsp parsley flakes (Dried)
  • 2 tsp chicken bouillon (Used instead of salt)
  • 0.5 tsp black pepper
  • 8 cups chicken broth (Homemade, or boxed broth as an alternative)
  • 2 large chicken breasts (Cooked and shredded; rotisserie chicken may be used instead)
  • 0.5 stick butter (Add after cooking; equivalent to 4 tablespoons)

Steps

  1. 1

Place a large pot over medium-high heat. Add 4 tablespoons (½ stick) of butter and let it melt.

  2. 2

While the butter melts, dice the small yellow onion into bite-sized pieces and dice the two celery ribs. Grate the carrots.

  3. 3

Add the prepared onion, celery, and carrots to the pot. Sauté for 5–7 minutes, until the vegetables are tender.

  4. 4

Add the minced garlic and uncooked jasmine rice. Do not rinse the rice; its extra starch is desired.

  5. 5

Sauté the rice and vegetables for about 3 minutes.

  6. 6

Add the crushed rosemary, dried thyme, dried parsley flakes, chicken bouillon, and pepper. Stir to distribute the seasonings.

  7. 7

Pour in the chicken broth, then add the cooked, shredded chicken breasts. Boxed broth or rotisserie chicken may be used as alternatives, as applicable.

  8. 8

Turn the heat to medium and bring the pot to a simmer.

  9. 9

Simmer for about 20 minutes, stirring occasionally, until the rice is completely cooked and most of the liquid has been absorbed.

  10. 10

Turn off the heat and add the remaining ½ stick of butter.

  11. 11

Remove the pot from the burner and let it sit for 5 minutes before serving.

Notes

The transcript says the chicken is already cooked and shredded. It does not specify the weight of the chicken breasts or the exact serving yield; servings are estimated. The total time includes the stated 5-minute rest.
