Ingredients

  • 420 g all-purpose flour
  • 198 g water (Lukewarm)
  • 28 g butter (At room temperature; divided as directed)
  • 1 large egg
  • 50 g granulated sugar
  • 1.25 tsp table salt
  • 9 g instant yeast
  • 43 g butter (Melted and divided for brushing before and after baking)
  • 1 large egg white (Whisked with 2 tablespoons cold water for brushing seeded buns)
  • 2 tbsp cold water (Whisk with the egg white)
  • sesame seeds (Or use the seeds of your choice; optional)

    Weigh the flour, or measure it by gently spooning it into a measuring cup and sweeping off any excess.

    Combine all of the dough ingredients—the flour, lukewarm water, room-temperature butter, egg, sugar, salt, and instant yeast. Mix and knead by hand, with a mixer, or in a bread machine until a soft, smooth dough forms.

    Cover the dough and let it rise in a warm place until nearly doubled in bulk, about 1 to 2 hours.

    Gently deflate the risen dough and divide it into eight pieces of about 100 g each. Shape each piece into a ball; make smaller or larger buns if desired.

    Flatten each dough ball with the palm of your hand until it is about 3 inches in diameter.

    Arrange the shaped buns on a lightly greased or parchment-lined baking sheet. Cover and let them rise until noticeably puffy, about 1 hour.

    Toward the end of the second rise, preheat the oven to 190°C / 375°F.

    Brush the puffy buns with about half of the melted butter. For seeded buns, brush the egg-white and cold-water mixture over the melted butter, then sprinkle with sesame seeds or other seeds.

    Bake for 15 to 18 minutes, until the buns are golden brown. Remove them from the oven and immediately brush with the remaining melted butter for a satiny, buttery crust. If using seeds, brush carefully so they remain in place.

    Transfer the buns to a rack and cool before slicing horizontally. Use as a base for burgers or sandwiches.
