Ingredients
- 5 large potatoes (Peeled and cut into 1-inch cubes)
- 3 tbsp olive oil
- 1 tbsp garlic (Minced)
- 3 tbsp tomato paste (The source says “tomato pasta”; interpreted as tomato paste based on the method)
- 1 tbsp chili flakes
- 1 tbsp Cajun seasoning
- 1 tbsp fresh coriander (Freshly chopped)
- salt (To taste)
- 2 tbsp fresh lemon juice
Steps
- 1
Heat the olive oil in a pan or skillet. Fry the peeled, 1-inch potato cubes until fully cooked, crispy, and golden. Set the fried potatoes aside.
- 2
Add olive oil and the minced garlic to a pan. Sauté the garlic for 30 seconds.
- 3
Add the tomato paste, chili flakes, and Cajun seasoning. Mix well.
- 4
Add the fried potatoes and stir to combine them with the seasoned tomato mixture.
- 5
Season with salt to taste.
- 6
Top with the freshly chopped coriander and fresh lemon juice. Serve warm.
Notes
The source lists 3 tablespoons of olive oil and refers to olive oil both for frying and for sautéing, but does not specify how the oil is divided. It also says “tomato pasta” in the ingredient list; the method says tomato paste, so tomato paste was used here.
