Ingredients
- 2 cup White rice (cooked separately with yellow food coloring)
- Yellow food coloring (a few drops added to rice cooking water)
- 2 tbsp Cooking oil (for sautéing)
- 1 Onion (diced)
- 3 Robot peppers (one each of red, green, and yellow bell peppers, diced)
- 1 tbsp Spice for Rice (such as Robertsons or similar savory rice seasoning)
- 1 tsp Paprika
- 0.5 tsp Turmeric
- 0.25 cup Nando's Peri-Peri Sauce (choose your preferred heat level)
Steps
- 1
Cook the white rice according to package instructions, adding a few drops of yellow food coloring to the water to achieve a vibrant yellow color. Set aside once cooked.
- 2
Dice the onion and the 'robot peppers' (red, green, and yellow bell peppers) into small, uniform pieces.
- 3
Heat cooking oil in a large pan or wok over medium heat. Add the diced onions and peppers and sauté until they begin to soften.
- 4
Add the spices (spice for rice, paprika, and turmeric) to the pan with the vegetables. Stir well to coat the vegetables and toast the spices until fragrant.
- 5
Pour in the Nando's peri-peri sauce and stir it into the vegetable and spice mixture.
- 6
Add the cooked yellow rice to the pan. Mix everything together thoroughly until the rice is evenly coated with the sauce and vegetables.
- 7
Continue to heat for 1-2 minutes while stirring to ensure the rice is heated through and the flavors are well combined. Serve hot.
Notes
The creator mentions using yellow food coloring in the rice specifically because they didn't want the rice itself to be too spicy from the spices used later in the vegetable mix. 'Robot peppers' is a common South African term for a pack of red, green, and yellow bell peppers.
