Ingredients

  • 1 cup chicken broth
  • 1 cup sour cream
  • 2 tsp garlic powder
  • 2 tsp smoked paprika (Regular paprika may be used instead.)
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1 packet ranch seasoning (Optional; omit if desired.)
  • 12 oz frozen corn (Two cans of corn may be used instead; optional if desired.)
  • 1 block cream cheese (Cube it to make it easier to melt. The creator says milk may be substituted, and this ingredient is optional.)
  • 3 oz bacon bits
  • 2 chicken breasts
  • 2 cups pepper jack cheese
  • 1 box pasta (Cook one box on the stovetop. Any pasta may be used; the creator used rotini.)
  • fresh parsley (For topping.)

Steps

  1. 1

Add the chicken broth, sour cream, garlic powder, smoked paprika or regular paprika, onion powder, black pepper, optional ranch seasoning, frozen corn, cubed cream cheese, and bacon bits to the crockpot. Stir everything together well.

  2. 2

Add the two chicken breasts to the crockpot. Turn the breasts over so both sides are coated with the mixture.

  3. 3

Cover the crockpot with its lid. Cook on High for 2 to 3 hours or on Low for 5 to 6 hours.

  4. 4

When the chicken is cooked, remove it from the crockpot and shred it.

  5. 5

Return the shredded chicken to the crockpot and stir it into the creamy mixture.

  6. 6

Add the pepper jack cheese and stir it into the hot mixture until incorporated and melted.

  7. 7

While the chicken cooks, cook one box of pasta on the stovetop according to the package directions. Drain it; any pasta shape may be used, including rotini.

  8. 8

Add the cooked pasta to the crockpot and stir everything together thoroughly.

  9. 9

Top the pepper jack chicken pasta with a little fresh parsley and serve.

Notes

The source does not specify the crockpot size, the exact weight of the cream-cheese block, or the pasta box size. Ranch seasoning, corn, and cream cheese are described as optional. Pasta is cooked separately on the stovetop rather than in the slow cooker.
