Ingredients
- 4 eggs (whole)
- 100 g butter (softened (at room temperature))
- 300 g cottage cheese
- 120 g egg white powder (provides structure and creaminess)
- 3 tsp baking powder
Steps
- 1
In a bowl, combine the cottage cheese with the room-temperature butter and blend well with a hand blender until smooth.
- 2
In a separate bowl, whisk the 4 whole eggs with an electric mixer until they are frothy and light in color.
- 3
Gently fold the two mixtures (the cheese/butter and the foamy eggs) together until well combined.
- 4
Add the egg white powder and 3 teaspoons of baking powder to the mixture.
- 5
Beat all the ingredients until you obtain a completely homogeneous mixture.
- 6
Prepare a loaf pan by lining it with parchment paper or greasing it.
- 7
Pour the mixture into the prepared pan, leveling the surface.
- 8
Cook in the air fryer at 160°C (320°F) for about 30 minutes. Alternatively, you can use a conventional oven at a similar temperature.
- 9
Let the bread cool completely before slicing it to ensure the crumb sets and achieves the best texture.
Notes
Cooking time may vary slightly depending on the power of your air fryer or the characteristics of your oven. It is essential to let it cool before slicing so it does not crumble.
