Ingredients
- 0.5 cup butter
- 1 onion (diced)
- salt (to taste)
- black pepper (to taste)
- 1 lb mushrooms (of choice; diced)
- 8 garlic (cloves, minced)
- 3 tbsp gluten-free flour (GF 1-to-1 flour)
- 5 sprigs thyme
- 1 cup white wine (dry wine recommended; any white wine works)
- 3 cups chicken stock (vegetable stock may be substituted)
- 1 cup heavy cream (dairy-free coconut cream may be substituted)
Steps
- 1
In a medium pot over medium heat, melt the butter. Once it is bubbling, add the diced onion and sauté for about 4 minutes, until cooked through. Salt the onion as you stir.
- 2
Add the diced mushrooms and sauté for 8–10 minutes, until cooked through. Salt them toward the end of cooking so they do not release too much water and become soggy.
- 3
Add the minced garlic and gluten-free flour. Stir to coat the vegetables and cook for 2 minutes.
- 4
Pour in the white wine to deglaze the pot, stirring to combine. Bring to a low simmer and simmer for 1 minute to cook off the alcohol.
- 5
Stir in the thyme and chicken stock. Season with salt and pepper to taste, then bring the soup to a low simmer.
- 6
Cover the pot and simmer on low for 15 minutes to develop the flavor, stirring every few minutes.
- 7
When the soup has developed and thickened, stir in the heavy cream.
- 8
Simmer uncovered on low for 5 minutes to combine the flavors, then turn off the heat.
- 9
Discard the thyme sprigs. Taste the soup and adjust the seasoning as needed.
- 10
Serve as is, or puree half the soup to make it creamier. Enjoy.
Notes
The recipe says you may use any mushrooms, though oyster, trumpet, maitake, and shiitake are recommended. Butter may be replaced with olive oil; the flour may be replaced with all-purpose flour or omitted in favor of a cornstarch slurry. The wine may be omitted if needed. Coconut cream is suggested as a dairy-free alternative. The source does not specify how to prepare a cornstarch slurry or give further substitution quantities.
