  • 1 tbsp Green chilli paste
  • 0.5 tsp Shahzeera (caraway)
  • 1.5 tbsp Kashmiri red chilli powder
  • 1.5 tsp Coriander powder
  • 1 tsp Salt
  • 1 tsp Garam masala powder
  • 0.5 tsp Cumin powder
  • 1 Tomato (Blended)
  • 1 tbsp Tomato paste
  • 2 Onions (Medium; fried until golden and crushed)
  • 5 Cashews (Soaked, then blended with almonds and cardamom)
  • 5 Almonds (Soaked, then blended with cashews and cardamom)
  • 2 Cardamom (Blended with soaked cashews and almonds)
  • 0.25 cup Onion oil
  • 1 tbsp Soy sauce
  • 2 tbsp Ketchup
  • 1 tbsp Green chilli sauce
  • 1 tbsp Red chilli sauce
  • 1 tbsp Vinegar
  • 0.5 tsp Red food coloring
  • 0.25 cup Ghee
  • 9 Curry leaves (8 to 10 leaves)
  • 2 Green chillies (Slit)
  • 1.5 tsp Fresh coriander (Chopped; amount not specified)
  • 0.75 tsp Black pepper
  • 0.5 cup Water
  • Salt (Adjust to taste at the end)

Steps

  1. 1

Combine the chicken with the yogurt, ginger-garlic paste, green chilli paste, shahzeera, Kashmiri red chilli powder, coriander powder, 1 teaspoon salt, garam masala, cumin, blended tomato and tomato paste, golden-fried crushed onions, the soaked blended cashews, almonds and cardamom, onion oil, soy sauce, ketchup, green chilli sauce, red chilli sauce, vinegar, and red food coloring. Mix until the chicken is coated; cover and marinate for at least 1 hour.

  2. 2

Heat the ghee in a pan and add the curry leaves.

  3. 3

Add the marinated chicken to the pan and mix well.

  4. 4

Pour in 1/2 cup water and stir. Cover and cook over medium heat for 20–25 minutes, mixing occasionally to prevent burning, until the chicken is done and some gravy remains.

  5. 5

Reduce the heat to low and cook for a further 5 minutes, until the oil separates.

  6. 6

Add the slit green chillies, chopped coriander, and black pepper. Adjust the salt to taste.

  7. 7

Serve hot with phulka, paratha, or rumali roti.

Notes

The recipe lists chopped coriander without an amount. Flatbreads are suggested for serving but no amounts are provided. The source does not specify how the onion oil is made.
