Ingredients
- 250 g Butter (softened; the creator says to soften it without using a microwave)
- 30 g Light brown sugar
- 300 g Caster sugar
- Vanilla (a dash)
- 2 Eggs
- 400 g Plain flour
- 0.5 tsp Baking powder
- 100 g Dark chocolate chips
- 75 g Mini marshmallows (75 g for the dough; extra marshmallows are used as a topping, but the amount is not stated)
- Digestive biscuits (one underneath each cookie dough ball; quantity not stated)
Steps
- 1
Soften the butter in a bowl. The creator specifies not to use a microwave but does not describe the alternative method.
- 2
Add the light brown sugar and caster sugar to the softened butter. Gently cream the butter and sugars together.
- 3
Pour in a dash of vanilla.
- 4
Crack in the eggs and stir until everything is combined.
- 5
Add the plain flour and baking powder. Fold the flour mixture through until it is about halfway combined and dry lumps remain.
- 6
Add the dark chocolate chips and mini marshmallows. Stir until fully combined and no dry lumps remain.
- 7
Use a cookie scoop or your hands to shape the dough into balls.
- 8
Put the dough balls in the freezer for 30 minutes.
- 9
Preheat the oven to 190°C. Before baking, place one digestive biscuit underneath each dough ball.
- 10
Bake at 190°C for 15 minutes.
- 11
When the cookies come out of the oven, use a bowl to gently shape or “hoosh” them. The exact shaping motion is not explained in the source.
- 12
Cut a marshmallow in half and press it into the top of each cookie. The amount of extra marshmallow is not stated.
- 13
Optionally, toast the marshmallow topping with a blowtorch. The creator says this step is not necessary if you have never used one before.
Notes
The source does not give a quantity for the vanilla, digestive biscuits, or marshmallow topping; it also does not specify how to soften the butter other than saying not to use a microwave. Serving estimate is based on the unspecified number of dough balls and biscuits. The transcript says 190 but does not state a temperature scale; 190°C is shown in the on-screen text.
