Ingredients

  • 0.5 cup unsalted brown butter (Browned, then cooled until still liquid but slightly thick)
  • 9 tbsp brown sugar
  • 3 tbsp sugar (For the cookie dough)
  • 1 egg (Room temperature)
  • 0.5 tsp vanilla (For the cookie dough)
  • 1.333 cup all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp cinnamon (For the cookie dough)
  • 0.25 tsp salt
  • 3 oz cream cheese (Room temperature; for the cheesecake filling)
  • 1.5 tbsp sugar (For the cheesecake filling)
  • 0.25 tsp vanilla (For the cheesecake filling)
  • 0.5 cup sugar (For the cinnamon sugar)
  • 4 tsp cinnamon (For the cinnamon sugar)
  • caramel sauce (For drizzling)

Steps

  1. 1

Beat the cream cheese, 1½ tablespoons sugar, and ¼ teaspoon vanilla until smooth.

  2. 2

Scoop the cheesecake mixture into ½-tablespoon portions onto parchment paper. Freeze for 30–60 minutes, until firm.

  3. 3

Brown the unsalted butter in a saucepan. Set it aside to cool until it remains liquid but has thickened slightly.

  4. 4

Whisk the cooled brown butter with the brown sugar and the 3 tablespoons sugar.

  5. 5

Add the egg and ½ teaspoon vanilla, and whisk to combine.

  6. 6

Fold in the flour, baking soda, ½ teaspoon cinnamon, and salt until just combined. If the dough is too soft, chill it for about 20 minutes.

  7. 7

Scoop the dough into 6 portions and roll them into balls. Flatten each ball, place one frozen cheesecake filling portion in the center, and wrap the dough completely around the filling.

  8. 8

Mix the ½ cup sugar and 4 teaspoons cinnamon to make the cinnamon sugar.

  9. 9

Roll each stuffed dough ball in the cinnamon sugar, then place the cookies on a lined baking sheet.

  10. 10

Bake at 350°F for 10 minutes, or until the bottoms are golden. The cookies may look slightly underbaked when they come out; they will finish setting as they cool.

  11. 11

Let the cookies cool on the baking sheet. Gently reshape them if needed.

  12. 12

Once cooled, dip the tops in fresh cinnamon sugar.

  13. 13

Let the cookies cool completely, then drizzle them with caramel sauce.

Notes

The source does not specify how much caramel sauce to use. The cookies are expected to look slightly underbaked immediately after baking and finish setting as they cool.
