Ingredients

  • 1 9-inch pie crust
  • 3 large eggs
  • 0.5 cup dark brown sugar (packed)
  • 0.333 cup granulated sugar
  • 2 tbsp real maple syrup
  • 0.5 tsp salt
  • 2 tsp cinnamon
  • 0.5 tsp ginger
  • 0.5 tsp nutmeg
  • 0.25 tsp cloves
  • 15 oz pumpkin puree (1 can)
  • 1 cup heavy whipping cream

Steps

  1. 1

Preheat the oven to 400°F (205°C). Fit the pie crust into a 9-inch pie dish and set it aside.

  2. 2

In a large bowl, beat the eggs.

  3. 3

Add the brown sugar, granulated sugar, maple syrup, salt, cinnamon, ginger, cloves, and nutmeg. Beat until well combined.

  4. 4

Stir in the pumpkin puree, then add the cream. Beat until the filling is thoroughly incorporated.

  5. 5

Pour the filling into the unbaked pie shell. Bake for 10 minutes at 400°F (205°C).

  6. 6

Reduce the oven temperature to 350°F (175°C) and continue baking for about 35–40 minutes, until a knife inserted into the center comes out wet but fairly clean.

  7. 7

Cool the pie to room temperature before serving. It may also be chilled before serving.

Notes

The author recommends real maple syrup and heavy whipping cream rather than evaporated milk. Homemade pumpkin puree may be used; the source says to use 2 cups. Do not use canned pumpkin pie filling. Serve at room temperature or chilled; whipped cream is suggested for serving. The source lists 45 minutes total, although its two baking stages alone total about 45–50 minutes, before cooling.
