Ingredients

  • beets (sliced)
  • water (for brine)
  • 3.5 salt (calculated as a 3.5% solution of the water weight)

Steps

  1. 1

Prepare the beets by slicing them into uniform pieces.

  2. 2

Prepare a 3.5% salt-water brine by dissolving the salt into the water.

  3. 3

Place the sliced beets into a large jar and pour the brine over them.

  4. 4

Ensure the beets are completely submerged in the brine.

  5. 5

Keep the jar at room temperature for about 14 days to allow fermentation to occur.

  6. 6

After 14 days, transfer the beets to the refrigerator for storage.

Notes

Store the fermented beets in the fridge for up to 6 months. Ensure beets remain submerged in liquid to prevent mold.
