Steps

Sweet Potato Mash

  1. Wash, peel, and cut the sweet potatoes into chunks.

  2. Place the sweet potato chunks in a pot, cover with water, and boil for 10–15 minutes, until fork-tender. Drain.

  3. Mash the sweet potatoes with butter and milk until smooth and creamy. Season with salt and pepper to taste.

Garlic Butter Prawns

  1. Pat the prawns dry. Season them with salt and pepper to taste.

  2. Heat the olive oil and butter in a frying pan over medium heat.

  3. Add the minced garlic and cook for 30 seconds, until fragrant.

  4. Add the prawns and cook for 2–3 minutes on each side, until cooked through.

  5. Finish the prawns with lemon juice and chopped parsley.

Pan-Fried Broccoli

  1. Heat the olive oil in a frying pan over medium-high heat.

  2. Add the broccoli florets and cook for 3–4 minutes, stirring occasionally.

  3. Add a splash of water, cover the pan, and cook for another 2–3 minutes.

  4. Remove the lid. Add the minced garlic and season with salt and pepper to taste; cook for another minute.

  5. Finish the broccoli with a squeeze of lemon juice. Serve with the sweet potato mash and garlic butter prawns.

Notes

The mash method calls for butter, but the ingredient list gives no quantity for it. The author does not specify how much water is needed to boil the potatoes or the splash used to cook the broccoli; add enough water for boiling and a small splash for the covered pan.
