Ingredients
- 2 cup Soya chunks (approximately 60 grams)
- 1 tsp Salt (for soaking water)
- Boiling water (as needed for soaking)
- 0.5 tsp Salt (for seasoning chunks)
- 0.5 tsp Black pepper powder
- 2 tbsp Oil (for air frying coating)
- 0.25 cup Cornstarch (or corn flour)
- 1 Capsicum (medium, cut into squares)
- 1 Onion (medium, cut into squares)
- 2 tbsp Oil (for sautéing)
- 1 tbsp Garlic (chopped)
- 1 tbsp White vinegar
- 1 tbsp Soy sauce (gluten free)
- 1 tbsp Red or green chili sauce
- 1 tbsp Tomato ketchup
- Salt (to taste)
- 0.25 cup Cornstarch slurry (mix of 1/4 cup water + 2 tbsp cornstarch)
- 2 tbsp Coriander leaves or spring onion greens
- White sesame seeds (for garnish)
Steps

Take soya chunks in a bowl and add salt and boiling water.

Cover and let soya chunks soften for 5-10 minutes.

Thereafter take them out of hot water and let them cool so that they can be touched.

Squeeze them well to remove excess water.

Place the squeezed soya chunks in a clean bowl.

Add salt, pepper powder, cornstarch and oil. Skip oil if you are deep frying them.

Mix them well to ensure the chunks are evenly coated.

Put the soya chunks in the Air Fryer basket.

Air fry at 200 degree C for 20 minutes or until they turn brown and crisp. Shake the basket mid way.

Take the basket out and keep aside.

Heat oil in a pan.

Add chopped garlic.

Saute it until slightly brown.

Add capsicum and onion squares.

Also add salt.

Saute on high heat for 2-3 minutes but make sure onion and capsicum shouldn't lose their crunch.

Add vinegar, red or green chili sauce, soy sauce and tomato ketchup.

Cook for a couple of seconds.

Add the air fried soya chunks to the pan.

Also add cornflour slurry and coriander leaves or spring onion greens.

Mix everything so well so that sauces get coated on soya chunks.

Its ready. Enjoy hot after garnishing with white sesame seeds.
Notes
In place of cornstarch, you can use all-purpose flour as well. If Air frying, soya chunks will look white in color due to the corn flour coating, but they are actually brown underneath. Spring onion is the traditional choice for greens, but coriander works well as a substitute.
