Ingredients
- 1 lb fettuccine pasta
- 6 tbsp unsalted butter
- 1 tbsp fresh garlic (Freshly minced)
- 0.5 cup salt (To taste; used in the pasta cooking water and to season the sauce)
- black pepper (To taste)
- 0.5 cup reserved pasta water (Reserve from the cooked pasta; add more if needed to thin the sauce)
- 1 cup Parmesan cheese (Freshly grated; additional Parmesan may be used for garnish if desired)
- 4 tbsp cream cheese
- 1 cup unsweetened heavy whipping cream (Unsweetened)
- 1 tbsp fresh parsley (For garnish)
Steps
- 1
Cook the fettuccine in salted water according to the package directions.
- 2
Once the pasta is cooked, reserve 1/2 cup of the pasta water. Drain the remaining water and set the cooked pasta aside.
- 3
Heat a skillet over medium heat and add the butter.
- 4
Once the butter has melted, add the minced garlic. Sauté for 30 seconds, or until fragrant.
- 5
Add the heavy whipping cream, cream cheese, and freshly grated Parmesan cheese to the skillet.
- 6
Season the sauce with salt and pepper.
- 7
Add the reserved pasta water and mix until the sauce is thick and smooth.
- 8
If the sauce becomes too thick, add more water to thin it to the desired consistency.
- 9
Add the cooked fettuccine to the sauce and toss until the pasta is coated.
- 10
Garnish with fresh parsley and additional Parmesan cheese, if desired. Serve warm.
Notes
The source does not specify the amount of additional water needed if the sauce becomes too thick; add it gradually. Package cooking time for the pasta is not specified.
