Ingredients

  • 4 Heads of garlic (Peeled; soak them in warm water beforehand to make peeling easier.)
  • Fresh rosemary (To taste.)
  • Fresh oregano (To taste.)
  • Olive oil (Enough to completely cover the garlic.)
  • Toast (For the quality test and serving.)

Steps

  1. 1

Place the four heads of garlic in warm water for a few minutes. This will make them easier to peel.

  2. 2

Peel the garlic and transfer it to a container suitable for covering and placing over hot coals.

  3. 3

Add fresh rosemary and fresh oregano to the container.

  4. 4

Pour in olive oil until the garlic is completely covered.

  5. 5

Cover the container with aluminum foil.

  6. 6

Place the container directly on the hot coals and cook for 20–30 minutes.

  7. 7

Remove the container from the hot coals when the garlic is confited, then transfer it to a jar.

  8. 8

Serve the confit garlic on toast to taste.

Notes

The transcription does not specify the amount of rosemary, oregano, or oil, or the amount of warm water. It also does not indicate the type of container, the temperature of the coals, or storage instructions; keep the jar refrigerated and handle it hygienically as a general precaution.
