Weights are estimates. Together, the ingredients weigh about 895 g before cooking, which is about 225 g per serving.
Steps
Boil the potatoes in salted water until tender, then peel them while still warm.
Place the boiled potatoes in a large bowl and mash them thoroughly until smooth and no lumps remain.
Add the chopped parsley, salt, black pepper, paprika, and cornstarch to the mashed potatoes. Mix well until a dough-like consistency forms.
Take a small portion of the potato mixture and flatten it in your palm. Place a small amount of mozzarella cheese in the center.
Carefully roll the potato around the cheese to form a cylinder or log shape, ensuring the cheese is completely sealed inside.
Dip each potato roll into the beaten egg, coating it completely.
Roll the egg-washed potato log in breadcrumbs until evenly coated on all sides.
Heat vegetable oil in a deep pan over medium-high heat.
Fry the rolls in batches until they are deep golden brown and crispy on all sides, about 3-5 minutes.
Remove the rolls from the oil and drain on paper towels before serving hot.
Notes
Ensure the potato mixture is completely sealed around the cheese to prevent it from leaking out during frying. You can add other herbs like dill or chives for extra flavor.
