Ingredients

  • 1 whole wheat tortilla (can use 2 if the mold is large)
  • 2 eggs (beaten)
  • 1 lata canned tuna or mackerel (drained)
  • 1 roasted pepper (chopped)
  • 1 puñado spinach (fresh)
  • 1 puñado shredded cheese (to taste)
  • salt (to taste)
  • black pepper (to taste)

Steps

    Take a small oven-safe or air fryer-safe container (such as a disposable aluminum one).

    Place the whole wheat tortilla inside the container, shaping it to the mold; if the mold is too large, overlap two tortillas to cover it well.

    In a separate bowl, beat the two eggs and add salt and pepper to taste.

    Pour the beaten eggs over the tortilla in the mold.

    Add the drained tuna, roasted peppers, and spinach.

    Lightly mix the ingredients inside the tortilla and sprinkle the shredded cheese on top.

    Place the mold in the air fryer and cook for 12 minutes at 180°C.

Notes

Storage: It keeps well for 2 days in the refrigerator, although it is best consumed freshly made so the tortilla stays crispy. Suggested variations: - Smoked or fresh salmon with goat cheese. - Peas with ham and mint. - Mushrooms with bacon and cheese.
