Ingredients
- 1.5 lb chicken thighs (Source gives a range of 1.5–2 lb.)
- 0.5 cup diced chipotle peppers (La Costeña; alternatively, use 2 chipotle peppers in adobo sauce.)
- 3 tbsp honey
- 1 lime juice (Juice of 1 lime.)
- 0.5 tsp paprika
- 0.5 tsp salt
- 0.5 tsp garlic powder
Steps
- 1
Add the diced chipotle peppers, honey, lime juice, paprika, salt, and garlic powder to a blender. Blend the ingredients together into a smooth marinade and sauce.
- 2
Pour half of the blended sauce over the chicken thighs. Mix until the chicken is fully coated.
- 3
Cook the coated chicken thighs over medium heat until the thickest part reaches an internal temperature of about 165°F (74°C).
- 4
Slice the cooked chicken.
- 5
Pour the remaining blended sauce over the sliced chicken. Serve immediately or portion for meal prep throughout the week.
Notes
The transcript does not specify the cooking method, pan type, or cooking time; use a food thermometer to verify 165°F. Reserve half of the sauce before adding it to the raw chicken so the reserved portion does not contact raw poultry.
