Vegan Marble Muffins with Lemon and Chocolate

Imported by Suki on SeeMeCook

Ingredients

  • 280 ml Soy milk (Use 250 ml for the soy-milk mixture and 2 tbsp for the cocoa batter.)
  • 1 tsp Vinegar
  • 300 g Flour (Spelt or wheat flour.)
  • 2 tsp Baking powder
  • 1 tsp Vanilla sugar
  • 90 g Sugar
  • Salt (A pinch.)
  • 70 ml Oil (Vegetable or rapeseed oil.)
  • 100 ml Soy yogurt
  • 20 g Cocoa powder (For the chocolate batter.)
  • 1 tbsp Lemon juice (For the lemon batter.)
  • 2 tsp Lemon zest (Finely grated, for the lemon batter.)

Steps

  1. 1

In a bowl, whisk together 250 ml of the soy milk and the vinegar. Let the mixture sit for 5 minutes.

  2. 2

In a separate bowl, combine the flour, sugar, vanilla sugar, and baking powder.

  3. 3

After the 5-minute rest, add the oil and soy yogurt to the soy-milk mixture. Whisk until combined.

  4. 4

Add the wet ingredients to the dry ingredients and gently mix just until combined. Do not overmix, as this can make the muffins dense.

  5. 5

Divide the batter evenly between two separate bowls. Add the lemon zest and lemon juice to one bowl and mix until combined.

  6. 6

Add the cocoa powder and 2 tablespoons of the remaining soy milk to the other bowl. Mix until the chocolate batter is well combined.

  7. 7

Line a 12-cup muffin tray with paper liners, or leave it unlined if using a stainless-steel tray.

  8. 8

Add about 1 tablespoon of the light batter to each muffin cup, followed by about 1 tablespoon of the cocoa batter.

  9. 9

Use a fork or skewer to gently swirl the two batters together. Make only a few swirls to create the marble effect without overmixing.

  10. 10

Bake at 180°C (350°F) for about 20–25 minutes, or until a toothpick inserted into the center comes out clean.

  11. 11

Let the muffins cool before serving.

Notes

For the best texture, enjoy the muffins the same day or the next day. Once completely cool, they can be frozen in a freezer-safe container or bag for up to 3 months; thaw at room temperature. The source also suggests that optional vegan chocolate pieces may be added to the cocoa batter, but this is not part of the authoritative ingredient list.
