Ingredients
- 2 cup whole milk
- 1 vanilla bean (Or 1 tsp vanilla extract.)
- 0.25 cup white sugar
- 0.5 cup honey
- 1 cup heavy cream (Whipping cream may be used instead.)
- 3 tbsp cornstarch
- 3 egg yolks
- salt (A pinch.)
Steps
- 1
Pour the milk into a medium pot and place it over medium heat.
- 2
Using a sharp knife, split the vanilla bean lengthwise and scrape out the seeds.
- 3
Add the vanilla seeds and the vanilla pod to the milk. Bring the milk to just under a boil.
- 4
Add the sugar and honey to the milk. Stir for a few minutes to allow the vanilla to steep into the milk.
- 5
Remove the vanilla pod from the pot, scrape any remaining seeds from it, and discard the pod.
- 6
In a separate bowl, whisk together the heavy cream, cornstarch, egg yolks, and salt.
- 7
While continuing to whisk, pour a little of the hot milk into the cream mixture to temper it.
- 8
Pour the tempered mixture back into the pot with the remaining milk.
- 9
Cook for about 5 minutes more, stirring continuously, until the mixture has thickened noticeably.
- 10
Remove the pot from the heat and strain the pudding into a clean bowl.
- 11
Cover the bowl with plastic wrap and chill for at least 1 hour, until the pudding has set.
Notes
The source states that the pudding should chill for at least 1 hour. The recipe does not specify a serving temperature or whether the plastic wrap should touch the surface. The source notes that half-and-half can substitute for heavy cream, though this is reported in a comment rather than the main recipe.
