A classic Hawaiian snack featuring savory glazed Spam atop seasoned sushi rice, wrapped in a crisp nori strip. It's a perfect portable meal for breakfast, lunch, or dinner.

Ingredients

  • 1 can Spam (sliced into even pieces (typically 8-10 slices))
  • 2 cup Short-grain sushi rice (cooked)
  • Furikake seasoning (for sprinkling)
  • 4 Nori sheets (cut in half to make 8 strips)
  • Plastic wrap (for lining the can/shaping)
  • 1 tbsp Brown sugar
  • 2 tbsp Soy sauce
  • 2 tbsp Mirin

Steps

    Slice the Spam into even pieces (usually 8 to 10 slices per can).

    Place the Spam slices in a pan and pan-fry over medium heat until they are lightly browned on both sides.

    While the Spam cooks, prepare a fresh pot of short-grain sushi rice according to package instructions.

    In a small bowl, mix together 1 tablespoon of brown sugar, 2 tablespoons of soy sauce, and 2 tablespoons of mirin to create the musubi sauce.

    Pour the sauce over the Spam in the pan and continue cooking, flipping the slices occasionally, until the sauce reduces into a thick glaze and coats each slice thoroughly.

    Line an empty, cleaned Spam can with a large piece of plastic wrap, leaving enough overhang to pull it out later.

    Add about a 1/2-inch layer of cooked sushi rice into the bottom of the lined can and gently press it down to form a flat, compact layer.

    Sprinkle a layer of furikake seasoning over the rice.

    Top the rice with one slice of the glazed Spam.

    Grip the edges of the plastic wrap and lift the rice and Spam block out of the can.

    Wrap a strip of nori around the center of the rice and Spam block, sealing the edge with a tiny bit of water if needed. Repeat for the remaining slices.

Notes

You can use a professional musubi mold if you have one, but an empty Spam can works perfectly as a substitute. For extra flavor, some people like to add a thin layer of fried egg between the rice and the Spam.
