- 1 large cucumber (Thinly sliced)
- 4 tbsp Greek yogurt

- salt and pepper (To taste)
- 1 tsp sambal oelek (Optional, for some heat)
- 1 tsp sesame seeds (Optional, for garnish)
Steps

In a large bowl, combine the thinly sliced cucumber and salt. Let the cucumber sit for 5 minutes to draw out excess water.

- 3
Drain the cucumber slices and pat them dry with a paper towel.
- 4
Add the drained cucumber slices to the yogurt mixture and toss until evenly coated.
- 5
Season the salad with pepper to taste.
- 6
If desired, add the sambal oelek and toss to incorporate for extra heat.
- 7
Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- 8
Just before serving, garnish with sesame seeds if desired.
- 9
Serve chilled.
