- 0.333 cup Parmesan cheese (Freshly grated)
- Oil (For frying)
- 1.25 tbsp Cornstarch (Source states 1–1.5 tbsp)
- 4.5 cloves Fresh garlic (Minced; source states 4–5 cloves, for the garlic butter)
- 0.5 cup Mayonnaise (For the aioli)
- 5 cloves Roasted garlic (For the aioli)
- 1 tsp Garlic powder (For the aioli)
- Salt (To taste; for the aioli)
- Black pepper (To taste; for the aioli)
- 2 tbsp Lemon juice (Freshly squeezed; for the aioli)
- 1 tbsp Fresh parsley (Chopped; for the aioli)
Steps
- 1
Wash the Russet potatoes and slice them thinly.
- 2
Boil the sliced potatoes in salted water for 2–3 minutes, or until partially cooked.
- 3
Drain the potatoes, pat them dry, and transfer them to a wire rack. Let them cool.
- 4
Once the potatoes are cool, add the cornstarch and salt. Shake until the potato slices are fully coated.
- 5
Heat the frying oil over high heat. Once the oil is hot, reduce the heat to medium.
- 6
Fry the potatoes over medium heat for about 6–8 minutes, until crispy and golden.
- 7
While the fries cook or immediately afterward, sauté the butter and minced fresh garlic in a pan for 30 seconds.
- 8
Add the chopped parsley to the garlic butter and stir.
- 9
Drizzle the garlic-butter mixture over the fried potatoes.
- 10
Garnish the fries with the freshly grated Parmesan cheese.
- 11
Prepare the aioli by mixing the mayonnaise, roasted garlic, garlic powder, salt, pepper, lemon juice, and chopped parsley.
- 12
Refrigerate the aioli until serving.
- 13
Serve the fries warm with the garlic aioli sauce.
Notes
Use high-quality potatoes for crispier fries. Adjust the garlic to taste. For extra crispiness, chill the potatoes before frying. The source does not specify the amount of frying oil or a roasting method for the aioli garlic.
