Ingredients

  • 1 tbsp Neutral oil (For the broth)
  • 2 Garlic (Cloves, minced)
  • 1 thumb Fresh ginger (Grated)
  • 1 heaped tbsp Red curry paste
  • 1 tsp Peanut butter (Or tahini)
  • 1 tsp Miso paste
  • 1 tbsp Soy sauce (For the broth; use to taste)
  • 2 cup Chicken stock
  • 0.5 cup Soy milk (Or coconut milk)
  • Shiitake mushrooms (Sliced)
  • Bok choy (Sliced)
  • 1 Instant ramen noodle cakes (Use 1–2 cakes)
  • Clean, uncracked eggs (Use eggs as desired; see food-safety note)
  • 250 g Lean mince
  • 1 tbsp Oyster sauce (For the sticky mince)
  • 1 tbsp Soy sauce (For the sticky mince)
  • 1 tbsp Dark soy sauce (For the sticky mince)
  • 1 tbsp Sweet chilli sauce (Or honey; for the sticky mince)
  • Spring onion (Sliced; optional, to serve)
  • Roasted sesame seeds (Optional, to serve)
  • Chilli oil (Optional, to serve)

Steps

  1. 1

Cook the lean mince in a pan until browned. Stir in the oyster sauce, soy sauce, dark soy sauce, and sweet chilli sauce or honey. Continue cooking for 2–3 minutes, until the mince is glossy.

  2. 2

Meanwhile, heat the neutral oil in a pot. Add the minced garlic and grated ginger and cook for 1 minute.

  3. 3

Stir the red curry paste, peanut butter or tahini, miso paste, and broth soy sauce into the pot until combined.

  4. 4

Pour in the chicken stock and soy milk or coconut milk. Bring the broth to a simmer.

  5. 5

Add the clean, uncracked eggs if using, along with the sliced shiitake mushrooms and instant ramen noodle cakes. Cook for 6½–7 minutes, or until the noodles are tender and the eggs are cooked to your liking. For food safety, the broth should reach a rolling boil at 100°C / 212°F for long enough to cook the eggs.

  6. 6

Add the sliced bok choy during the final 30 seconds of cooking.

  7. 7

Transfer the eggs to an ice bath and peel them. Alternatively, boil the eggs separately and add them at the end.

  8. 8

Divide the noodles and broth between bowls. Top with the sticky mince and optional sliced spring onion, roasted sesame seeds, and chilli oil.

Notes

The source states that the egg risk is considered very low in Australia, but eggshells can occasionally carry bacteria such as Salmonella. Use clean, uncracked eggs and ensure the broth reaches a rolling boil. Pregnant people, immunocompromised people, and those cooking for higher-risk individuals should ensure the eggs are thoroughly cooked, or boil them separately and add them at the end. Quantities for the mushrooms, bok choy, eggs, and optional toppings were not specified.
