Ingredients
- 1 Rice paper (Large sheet for Vietnamese spring rolls)
- 1 Egg (Lightly beaten)
- 0.25 cup Shredded cheese (Such as mozzarella, cheddar, or your preferred cheese)
- 1 tsp Cooking oil (For cooking in the pan)
- Salt (To taste)
- Black pepper (To taste)
Steps

Place all the ingredients near the stove. Work quickly, as rice paper becomes sticky when hydrated.

Heat a nonstick skillet over medium heat and add the oil.

Briefly moisten a sheet of rice paper with water without allowing it to soften completely. Place it in the hot skillet.

Pour the beaten egg over the rice paper and carefully spread it to cover most of the surface. Season with salt and pepper.

Sprinkle the cheese over the egg. Cook for 2 to 3 minutes, until the egg is almost set and the underside of the rice paper begins to brown.

Fold the rice paper over the filling to form a wrap. Continue cooking for 1 to 2 minutes per side, until golden and crispy and the cheese has melted.

Remove the wrap from the skillet, let it rest for about 1 minute to firm up, and serve hot.
