Ingredients

  • 2 Sourdough bread (Slices should be fairly thick and have a good structure, allowing them to absorb the liquid without breaking.)
  • 50 g Egg white
  • 50 g Coconut water (Alternatively, use milk or a plant-based drink.)
  • 10 g Erythritol and stevia (Erythritol and stevia blend.)
  • 3 g Defatted cocoa powder
  • 2 g Cinnamon for the mixture
  • 1 g Extra-virgin olive oil (Approximately; for greasing the pan.)
  • 100 g 0% Greek yogurt (For the cream.)
  • 10 g French Vanilla whey (Optional; increases the protein content and makes the cream thicker and creamier.)
  • Cinnamon for the cream (To taste.)
  • Salt (A pinch.)
  • 20 g Chocolate peanut butter (10 g per French toast.)
  • 100 g Blueberries (50 g per French toast; they may be fresh or frozen after being washed.)

Steps

  1. 1

The night before, prepare the soaking mixture by whisking together the egg white, coconut water, erythritol and stevia, defatted cocoa powder, and cinnamon until smooth.

  2. 2

Add the bread slices and coat them well on both sides. Use a spoon to collect any remaining mixture and distribute it over the bread.

  3. 3

Cover the bread with plastic wrap and leave it to soak overnight in the refrigerator. During the resting time, it should absorb all the liquid.

  4. 4

Prepare the cream by mixing the Greek yogurt, optional whey, cinnamon, and a pinch of salt until thick and creamy. Cover with plastic wrap and refrigerate overnight.

  5. 5

The next morning, lightly grease a pan with the extra-virgin olive oil and spread it evenly with a brush.

  6. 6

Place the bread slices in the pan, cover with a lid, and cook for approximately 5 minutes over medium-low heat.

  7. 7

Turn the slices with a spatula or knife and finish cooking on the other side. They should be thoroughly cooked and golden on the outside but soft inside.

  8. 8

Spread 10 g of chocolate peanut butter over the base of each slice.

  9. 9

Divide the protein cream between the two French toasts and spread it over each slice.

  10. 10

Top each French toast with 50 g of blueberries and serve.
